Salsa Verde

Hubbyman’s Salsa Verde…

My Colorado born and raised Hubbyman is a Mexican Food Junkie ( I have been looking for a 12 step program, any near you ?) He is a Tamale fan from way back, but I tend to not want to heat up the stove with a steamer in JULY! So, I made him a snack… Salsa Verde, his favorite, I’m his hero now, hope I can handle the fame.

 

5 Tomatillos ( husked and cut in half)

2-3 Tablespoons Fresh Cilantro ( more or less to taste)

2 Cloves of Garlic

1/4 Onion

1-3 Jalapenos ( seeded and cut in half, you can leave the seeds if you like more heat)

1/2 tsp. Cumin

Salt and Pepper to taste

1 1/2 tablespoons Olive Oil

Sauté the tomatillos, onion, and the jalapenos in a frying pan with olive oil for 4-5 minutes.

Then add the garlic cloves and continue cooking until the tomatillos are slightly browned (not burned).

Remove from the heat and blend the ingredients in a blender or food processor, add the cilantro, cumin, salt and pepper at this step.

Note: I put a towel on top of my blender when blending hot food, just in case.

If you want a thinner consistency, add a small amount of water or lime juice. ( I used lime today because I already had some squeezed from the pie yesterday)

You can chill or serve warm!

Grab those chips and get to snacking!
