Tex Mex Bean Dip

Bean DIP!! We have been on a serious dip kick this past month. I dunno why, but I’m certainly not gonna question such a good thing. That hunnyman O’ mine loves bean dip. I am a fan myself, so when I knew we would have the night alone together I made our favorite dip and we sat in the family room with a bowl between us, TV off and just had a great night being us.

It’s a very filling dip and can be eaten as a meal, just as we dd. It is perfect for parties and football night …or any night. Hope you enjoy it.

What you will need:

1 pound of roll sausage

1 tablespoon ground cumin

1 eight ounce block of softened cream cheese

1 can refried beans

1 cup cubed Velveeta® block cheese ( or a brand like it, what ever you can get)

1 cup Green Salsa Verde

1 cup shredded cheddar

pico and chips for serving

Add the sausage to a skillet and brown, half way through add the cumin and mix well. Drain off all or any of the fat.

In a large bowl, add the cream cheese, beans and ground sausage.

Add the salsa verde and fold the ingredients until well combined.

It will look like this… not too attractive I know…..

Add your cheddar cheese and mix in a few times…

Cube enough of the melting cheese to get a heaping cup full and fold into the dip .

Bake at 300 degrees for about 30-35 minutes

Top with pico and serve immediately with tortilla chips.
